Sizzlin’ Summer Pierogi Recipes

Serving pierogi at a get together is a guaranteed way to make new friends. While pierogi are most popular as a comfort food for cooler weather, we found some ways for you to incorporate them into your next summer hang.

Pierogi Salad (a take on pasta salad!)

Why have regular potato or pasta salad when you can have pierogi salad? We mixed our potato & cheese pierogi with fresh veggies, mozzarella pearls and tangy balsamic dressing . Feel free to get creative and mix in your favorite ingredients! If you want to veer more towards potato salad, you could use the same ingredients but swap pierogi for potatoes.

Ingredients:

  • Jaju Potato & Cheese Pierogi

  • Fresh vegetables of your choice ( we used corn, chopped fresh bell peppers, & chopped cherry tomatoes)

  • Mozzarella pearls

  • Balsamic dressing

Method:

1 . Cook potato & cheese pierogi according to package instructions. Let cool. 

2. In a large bowl, combine pierogi, vegetables, mozzarella, and balsamic dressing . 

3. Mix well & serve chilled. 

Pierogi Caprese Skewers

Why serve plain caprese skewers when you can add pierogi to them? We used potato & cheese pierogi, cherry tomatoes, mozzarella pearls, and fresh basil. For best results, cut the pierogi after they cool using food grade kitchen shears.  

Ingredients:

  • Jaju Potato & cheese pierogi

  • Cherry tomatoes

  • Mozzarella pearls

  • Fresh basil

  • Olive oil

  • Balsamic glaze

Method:

  1. Cook pierogi according to package instructions. Allow them to cool, then cut pierogi evenly in quarters with food grade kitchen shears. 

  2. On each skewer, alternate between pierogi, cherry tomato, mozzarella, and basil until skewer is full. 

  3. Arrange skewers on a serving platter and drizzle with olive oil and balsamic glaze

Pierogi Gazpacho Shooters
Gazpacho is cool, but pierogi gazpacho shooters are cooler. Perfect for summer parties, these shooters are a fun and refreshing way to serve up some pierogi love. 

Ingredients:

  • Jaju Sweet potato & caramelized onion pierogi

  • Salami (or kielbasa round!), folded 

  • Mozzarella cheese stick, cut in pieces

  • 4 ripe tomatoes, chopped

  • 1 cucumber, chopped

  • 1 red bell pepper, chopped

  • ½ red onion, chopped

  • 2 garlic cloves, minced

  • 2 TBSP red wine vinegar

  • ¼ cup olive oil

  • Salt & pepper to taste

Method:

  1. Cook sweet potato & caramelized onion pierogi according to package instructions, let cool. Cut in half using kitchen grade shears.

  2. In a blender, combine tomatoes, cucumber, pepper, onion, garlic, red wine vinegar, olive oil. Pulse until desired consistency. Season with salt & pepper to taste. 

  3. Pour the gazpacho evenly in small shooter cups

  4. Skewer a piece of pierogi, mozzarella cheese and folded salami on each toothpick and layer over the shooter cup. Serve chilled! 

We love pierogi fried in butter and onions as much as anyone, but we love finding new ways to incorporate pierogi and introduce them to new people who might not have tried them otherwise.
